Raspberry Lemon Fruit Dip

- 1 cup fresh raspberries
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 cup plain Greek yogurt
- 1/2 cup cream cheese softened
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh mint leaves for garnish (optional)
Prepare the Raspberries: In a small bowl, mash the fresh raspberries with a fork until they form a chunky puree. You can also use a food processor or blender for a smoother consistency.
Combine the Ingredients: In a large mixing bowl, combine the mashed raspberries, lemon zest, lemon juice, Greek yogurt, softened cream cheese, honey (or maple syrup), and vanilla extract. Mix well until all the ingredients are fully incorporated and the dip is smooth and creamy.
Chill the Dip: Cover the bowl with plastic wrap and refrigerate the dip for at least 30 minutes to allow the flavors to meld together. This step is optional but enhances the overall taste.
Garnish and Serve: Transfer the dip to a serving bowl. Garnish with fresh mint leaves, if desired. Serve chilled with an assortment of fresh fruits like strawberries, pineapple, grapes, and apple slices.
- You can use frozen raspberries if fresh ones are not available. Thaw and drain them before mashing.
- Adjust the amount of honey or maple syrup to suit your taste preferences.
- For a lighter version, use low-fat Greek yogurt and cream cheese.
